Lemon Ice Box Cake


1 box Duncan Hines Moist Deluxe Supreme Lemon Cake Mix 1 pkg. Lemon Instant Pudding Mix 1/3 c Vegetable Oil 1 c Water 1/3 c Lemon Juice 1 c Buttermilk 3 Eggs Glaze: 4 c Confectioners Sugar 1/3 c Lemon Juice 3 tbsp Vegetable Oil In large bowl, stir together dry cake mix and pudding mix. In another bowl, combine vegetable oil, water, lemon juice, buttermilk, and eggs. Beat with mixer until well blended. Add to dry mix and beat until combined. Pour cake into greased 9x13 pan. Bake at 350 degrees for 35-40 minutes. It will require a couple minutes longer baking time than box mix calls for because of extra moisture from milk. Stick a toothpick in center to check for doneness. For glaze, combine oil, powdered sugar, and lemon juice with mixer until smooth. Add a tablespoon of water if consistency isn't saucy enough for you. Glaze the cake.
